Cream Cheese Icing

Awhile back someone asked for the recipe that I use for cream cheese icing...so here it is!

Start my mixing 1 package of cream cheese, with 1/2 cup of marg....mix it together until it is smooth.

 Add 2tsp vanilla, and mix it in as well.

Then start adding icing sugar until you reach your desired consistency...for piping I usually add 3-4 cups.

PERFECT!
If you want to make chocolate cream cheese icing (which is my new FAV), just add about 1/3 cup cocoa before you start adding in the icing sugar!

And since this is a post about icing, I thought why not share this little tip...

When you are filling your piping bag put it into a cup and it is 1000 times easier, and cleaner to fill!


And here are the little beauties that I was making this icing for.  They were for a hot pink, teal, black and white rockstar themed baby shower that I went to this afternoon!

IT'S HERE!!!

I ordered a silhouette awhile ago and it finally arrived!!!  I am beyond excited about all of the projects that I want to try out!  I did one quick thing tonight and I am already in love!

My sister, the fellas and I are heading to a barbie birthday party tomorrow...hopefully I will get to do a feature on it...but anyways here is our gift to the birthday girl all wrapped up and beautiful!!!

Sorry about the crummy lighting...by the time I got done weeding (I pulled A TON of dandelions, seriously if you weighed the bin it would probs be close to A TON), the daylight was gone!!!

Pizza Bites

Sorry I have been totally lacking in blog posts lately, it was super nice out so we were busy spending all our time outside, and then it got super rainy and it is hard to be motivated when it is so grey out!
Anyways, I have been doing things...I just need to catch up on some blogging!

If you are looking for a quick snack, or maybe a lunch for little ones, these pizza bites are PERFECT!
Here is the line-up...

Start by rolling out the pizza dough and cutting it into 12 pieces, if they are not totally equal it is not the end of the world.

Cut your pepperoni (or whatever other toppings you pick, veggies would be yummy!) into bite sized pieces.

Put a little bit of your cut up toppings onto each piece.

add a little bit of cheese...

and a bit of tomato (or pizza) sauce.

Now it is time to wrap them up, you could use whatever method you choose but this is what I have found to work best.  Grab two opposite corners and pinch them together.

then grab the two remaining corners and pinch them together.

then pull up each of the open pieces and pinch until it is sealed.

 Place them in a greased pan and top with remaining cheese.

Bake at 400 for about 15 minutes and voila!!!

SO YUMMY!!!

First Guest Post!!!

So I am crazy excited to be introducing my first guest post!!!  Mel is one of my real life besties and has an awesome blog of her own called Keeping Up With The Roths!  Take it away Mel!

I'm sending a Spring  greeting from over at Keeping up with the Roths.   I wanted to share what I consider my creative side.  Since my boys are tough on everything (like boys are), we have had these leaky rain boots kicking around.  After seeing them sitting for a while I figured why not turn my trash into beauty!  

My 3 year old Bennett helped me make these fun plant boots.



Gavin got in there and dirty too!

It was so simple I'm ashamed to say it as creative as I get lately.

I have been wanting to do this project for awhile now...and since it is for my momma, and tomorrow is Mothers day I figured I better get my poop in a group and get it made!!!

KEEP COOL!!!

So this is a modified version of another project I found on pinterest...if you are not on yet...GET ON!!!  Just leave me a comment with your email and I will send you an invite!

Even though the warm weather is not quite here yet, why not get everyone prepared by stocking their freezers with some freezies!!!

Here is what you need...

Start by deciding how many freezies you want in each package...I put 12 in each. Then cut your tulle (I used the stuff with the bigger holes in it), to have 2-3inches on either side, and roll the freezies up!

Tie with ribbon..

And top with your message!

I can't wait to get out and deliver these :)

If you would like to do this simple project here is the printable.  If you double click it it will open in a new window, then just right click and save it to your computer.  You could print it on your own printer, or print it as a 4x6 photo at your local photo printer (this is what I did).

Margarita Cheesecake Freezes

What better way to celebrate Cinco de Mayo than with a batch of Margarita Cheesecake Freezes!

This recipe was in a Martha Stewart Living magazine years ago, and you only have to make it once and it will instantly become a favorite!

Here is the line-up!

Start by beating your cream cheese until it is totally smooth...

Add your sour cream, icing sugar, lime zest, lime juice, tequila and triple sec...
 and mix until smooth!
 In a separate bowl whip your cream until stiff peaks form.

Fold the whipped cream into your cream cheese mixture, cover and throw it into the freezer for about 30 minutes.

While that is chilling you can mix up your melted butter, graham cracker crumbs, and sugar.

Put some of the frozen mixture into a dish, top with the crumbs and ENJOY!!!

Margarita Cheesecake Freezes
1 block of cream cheese
1/4 cup sour cream
1/3 cup icing sugar
1 tbsp grated lime zest
2tbsp fresh squeezed lime juice
2tbsp tequila
2tbsp triple sec
1/2 cup whipping cream
2tbsp sugar
6tbsp graham cracker crumbs
2tbsp margarine
