Short on time and need a treat???

Today the sun FINALLY made a long overdue appearance!  We were having some friends over so as soon as the boys were asleep I went out to mow the lawn, and by the time I got back in I only had an hour until our friends were here and no snack ready.  I wanted something summery seeing as it was the first day of summer (and our first day of sun in over a week), so I "pinterested" (the new googled) summer treat and I found a brilliant, quick, cute idea!

Here is my version!

CRAZY easy, and quick to make...
1.  Cut your ice cream sandwiches in half
2. Roll in sprinkles
3. place in the freezer until you are ready to eat!

Brownie Sundae!

I did it...A post without cream cheese!!!  Anyways, after the boys went to bed Johnny was craving a sweet treat so I decided to make him a brownie sundae!

Here is the line up for the brownies!
Start by preheating your oven to 350.  Then begin melting 3/4 cup of margarine with 4 squares of unsweetened chocolate.
 mmmm...chocolaty goodness!
Once it is all melted together you whisk in your three eggs (beat them together first).  Make sure that you start whisking BEFORE you add the eggs so that they don't cook!!!  It will go a little lumpy, but keep whisking and it will smooth out!  This picture is at the lumpy stage.

Once it is smooth, mix in 2 cups of sugar.

and 1 cup of flour

then pour your batter into a greased 9x9 pan, and put it in the oven for about 27 minutes.

Once it is in the oven you can start thinking about sprinkle selection!!! (I know I am such a geek)  I decided to make a valentines day sprinkle medley using the following three...

This picture is not great but I LOVE how they all look together!

a few minutes later (thats right the sprinkle selection took awhile!) your brownies will be ready to come out of the oven!

Now for the chocolate glaze.  Put 1/4 cup margarine and 4 squares of semi-sweet chocolate into a microwave safe container.  Put it in the microwave for 45 seconds and then take it out to stir.  Continue in 30 second intervals after the first one...mine only took one more time!

Pour the glaze onto the brownies (they do not have to be cool), spread it out, and then sprinkle!!!  This picture seriously does not do them justice...I think I am going to need a macro lens asap!

Top with some ice cream and chocolate sauce and you have yourself a brownie sundae!!!

Start by whisking everything except the snow on ingredient at a time until it is bubbly!

now start adding snow about a cup or two at a time.  Keep doing this until...

TA DA!!!  So yummy!  While John was eating it he just kept saying "I can't believe it's snow!"..he also said "I can't even taste the snow" hahaha!
SNOW ICECREAM
1 egg
2 cups of milk
vanilla...or other flavouring (the amount depends how strong you want the ice cream to taste)
1 cup of sugar
1 big ol' bowl of snow!

-start with the first ingredient and whisk away
-continue adding one ingredient at a time
-when the mixture becomes too hard to whisk switch to a spoon
