Creme Egg Cupcakes

So there is no line-up for this recipe because I wasn't quite sure where I was going with it...I did have a little bit of a plan in mind but not 100% sure.

I started by making my ultimate favorite chocolate cupcake recipe that was passed down from my G-ma!  It is on the very first page of my recipe book...although I have made it so many times I could probably do it from recall!
 (the amounts are written at the bottom)...

Cream together your marg and sugar, and then add the cocoa.

Apparently I skipped pictures for a few steps...they are easy though so you don't really need a picture...well it is all easy but I like the pics!  Okay back to business...
add your boiling water and mix...add your flour and mix.  Make your sour milk and add it...it will look odd for a bit but just keep mixing and it will become a perfect chocolate batter!

Add your baking soda and mix.  Then add your eggs & vanilla and mix. 
 PERFECT!!!  This is where I usually stop for cupcake batter...

but  NOT today! I added a broken up chocolate easter bunny!

RANDOM SIDE NOTE: I found a pack of 500 white cupcake liners at the Great Canadian Wholesale for $2.99!!!! I was crazy pumped!  They also had a pan that would bake 24 cupcakes at once...I might have to make a trip back for it!

Back on track...ready to go into the 350 degree oven.

18 minutes later :)

Now onto the icing...I made butter icing according to the back of the icing sugar package.

Cut open a bags worth of mini creme eggs

Scooped out their insides


 Added it to the icing

and mixed...yummy!!!

Ice your cupcakes and add some of the "egg shell" to the top!  I am so happy with how these turned out!


Chocolate Cupcake Recipe
-2/3 cup marg
-2 cups sugar
-1/4 cup cocoa
-1 cup boiling water
-2 cups flour
-1/2 cup sour milk (just add a splash of vinegar to milk)
-3/4 tsp baking soda
-2 slightly beaten eggs
-2 tsp vanilla

Bake at 350 for 18-20 minutes

Lucky Vanilla Cupcakes

The other night Ali from the Petite Parisian and I got together to do a little cupcake making.  I have been meaning to post this since Monday night...it is now 11:59 on Wednesday night, I am dead dog tired, but I have to get this up so you can all make them!!!  We decided to try Sprinkle Bakes' Lucky Vanilla Cupcakes...So cute, if you have not been by her blog you should check it out!

Here is your line-up! (I found the adorable little ceramic milk carton at Michaels for $2)

Start by mixing your butter and sugar

Perfect...

Add your eggs one at a time...not quite sure why but that's what the recipe says and who am I to argue!

Next you have to empty the vanilla bean into the vanilla...I totally love vanilla beans!

splat!

Can you see the bee-oo-tiful little flecks in there???  If not look harder, they are totally there!

Okay what happened next is a little embarrassing...I saw something sparkly and forgot to take pictures of the remaining steps of the batter.  Ali got her shipment of disco dust on Monday and at this point she was doing our golden horse shoes...I LOVE LOVE LOVE glitter...and this is edible glitter, so I don't think that I can really be held accountable for the missing pictures...you will be able to figure it out!!!

Anyways once you get them in the oven you can start on your icing...

cream your butter and cream cheese together...

add the honey and mix again

Add your icing sugar...the recipe calls for between 3 an 4 cups, we found 3 to be just perfect!

Next you need to grind up some pistachios...

Valentines Day Cupcakes!

I have no pictures of the making of these cupcakes...they were made while the fellas were still up.  The boys LOVE the kitchenaid as much as I do...seriously! But they are not big fans of me stopping to take pictures!

Anyways here is the final product, and yes I used the sprinkle medley AGAIN!!!  I can't get enough of it!  I did add another type of sprinkle into the mix though so it is not the EXACT same!!!


All the cupcakes, yummy!  This batch is heading over to the school that I taught at before the boys were born!
 And for all you cupcake lovers out there if you don't have this cupcake carrier you NEED to find one!!! It holds 36 cupcakes and it is the same size as the wilton one that only holds 12!!!  I found mine at Costco awhile back but I know that you can get them on amazon!

Chocolate Peanut Butter Cupcakes!

Last night we were over at my parent's house for dinner and we hit the jackpot...mini reese PB cups!  Today while the boys were napping I better find a way to put them to good use...  What better way than CHOCOLATE PEANUT BUTTER CUPCAKES!!!

Here is the line-up
(plus 2tbsp of milk...I was not sure if I was going to use it or not at this point!)
 Mix up the cake batter according to the package directions...the only thing I do differently is to use margarine instead of oil.

Pour the batter into the liners...that pitcher in this picture is one my G-ma made me and is my absolute fav for this job...never a drip!!!
 Unwrap all of the mini reese cups and plunk one into each cupcake.  You do not need to cover it or push it down because the cupcake will rise around it!  Toss them in the oven for about 18-20 minutes.

While the cupcakes are cooking you can get started on the icing...especially if you have kids napping that may be up any minute!

Mix 1 cup of PB with one block of cream cheese...
 like so
 Add 2 cups of icing sugar and 2 tbsp of milk and you end up with this peanut buttery, cream cheesey wonderfulness. {just a funny little side note - I had friends over this morning and I was asking them what they thought about a PB/CC icing...and one of them said of course it would be good because ANYTHING mixed with PB is good! hahaha, and I am kind of the opposite - I think that ANYTHING mixed with cream cheese is good!}

All that's left to do is ice the cupcakes!  Just make sure that your cupcake is cool before icing (like I mentioned earlier if you are expecting a little one up anytime you can speed up the process...I put my cupcakes outside to cool off...maybe it was more because I was desperate to taste one than being worried about the boys getting up!)
 and the inside! mmmmm, I will forsure be making these again!

Chocolate PB Cupcakes with PBCC icing
- prepare cupcake batter according to the package
-fill liners about 1/2 full and pop a mini reese cup into the batter
-bake for about 18-20minutes
-begin preparing frosting by mixing one cup of PB with one block of CC
-add 2 cups of icing sugar and 2 tbps of milk and beat until smooth
-ice your cupcakes
-ENJOY!
